As expected, the price of hard drives continues to fall. I most recently picked up a few 1 TB Wester Digital 'Green' SATA drives for $115 each. They're very fast, use a little less power, and run fairly cool.
I also bought what is now my new favorite external hard drive enclosure, the MacAlly G-S350SUA. It looks like a small Mac tower, has eSATA, FirwWire400, and USB for connectivity. There aren't any wires inside (all connectors are soldered to the board) and I measured sustained throughput on FW400 to my 2 year old bench Mac Mini at about 13 MB/s.
