Microsoft Profiles

Microsoft has a little known but highly effective utility for moving user profiles.  The 'CopyProfile' tool is a command line application that correctly copies one user profile to another.  The syntax is a little funky but makes sense once you've done it.  With this I was even able to correctly copy over one user mail settings even so that upon first launch of the mail with the newly copied profile, everything worked out of the gate, very nice!
